Shimane Ingredients & Local Sake in Tokyo
At Mondo, we use ingredients sourced from Shimane Prefecture and, as much as possible, refrain from using chemical seasonings—always striving for no added artificial flavorings. We cook with health-promoting rice oil, and we never use white sugar, table salt, or similar additives.
For drinks, we offer seasonal Shimane sake. From the 34 breweries of Shimane Prefecture, our manager—who is both a certified sake sommelier and a Shimane Sake Gold Meister—selects each bottle with care. Enjoy character-rich, artisanal nihonshu that showcase their unique flavor profiles.
The Ultimate Bleeding Technique: the “Tsumoto Method”
We’re an authorized Tsumoto Method establishment, and our manager is the only two-star certified technician in Tokyo’s izakaya scene.
By nearly completely bleeding the fish—right down to the capillary level—this method eliminates spoilage and fishy odors, drawing out the fish’s pure umami. Using a special nozzle to wash and expel the blood makes even traditionally “difficult” fish easy to enjoy.
This process maximizes flavor retention and allows for long-term preservation. Our heartfelt goal is to let you taste Shimane’s seafood at its very best.
